To be perfectly honest, if you would have told me I would be writing a book during the onslaught of Covid, I would have answered quite plainly that it was simply impossible.
And yet, thanks to the extra help of my husband, a lot of recipe testing by friends and family and a whole lot of grace and patience, somehow it got done.

Who is The Easy Camp Cookbook for?
I joke that at the very least this book has allowed us to put all our favorite family recipes in one place for easy-access. Managing food for camping is always the hardest and most time-consuming chore for me, and I know I’m not alone. It’s all the planning and prepping and it starts with “what in the world are we going to have this time??”
It’s so easy to default to hot dogs and s’mores. And, while there’s nothing wrong with those classics, it’s nice to mix it up a little too.
I am not a gourmet cook. I am no expert. I like my family to eat healthy, but also balance that out with treats, especially when we’re camping.
This book is for car campers and backpackers. It’s for singles, couples and families. It’s for people who love to cook and those who would rather someone else just do it for them. It’s for vegetarians, meat-eaters and even vegans.
Why Camping Food Matters
The food that you eat while camping and backpacking is usually unforgettable, for better or worse. After a long day outside or on the trail, food just tastes better than it does at home. I grew up camping in Alaska both in a tent and in our remote, rustic family cabin. I still remember the 7UP cake in the Dutch oven and the best Thanksgiving dinner we ever had, cooked over a campfire.
Now that I have my own family, I find it crucial to be prepared for a hungry herd of five kids with meals that are easy to prep, cook, and serve. Simplicity is key, especially while camping. However, that doesn’t mean you have to settle for hot dogs and subpar freeze-dried foods on the trail.
The Easy Camp Cookbook is a compilation of my family’s very favorite recipes that are (mostly) healthy, give energy to fuel our adventures, and are easy to make.
Many of the recipes include some instructions on how to do some or all of the prep work at home. This allows you to spend less time working at the campsite and more time relaxing and enjoying camping.
Camping is all about memories—and the food-related memories tend to be the ones that get passed on from generation to generation.

The Easy Camp Cookbook is MORE than just recipes. It includes the following important sections to be sure you’re truly making the most of your camping experience.

This includes what you should have in your first aid kit, campfire safety, how to store food properly and how to keep yourself and your fellow campers safe. We also have a section on how to build a campfire properly.
Backcountry Ethics
We cover Leave No Trace, how to be sure your water is safe, and what to be aware of in the backcountry.
Methods for cooking outdoors
Each recipe is labeled with the specific cooking method that works best for that meal with ideas for alternatives too. We also explain each of the camping methods and what tools you need for them.
Organizing your outdoor kitchen
Having an outdoor kitchen checklist, ideas for pantry staples, and how to actually organize your kitchen and your cooler are all covered thoroughly.
The Easy Camp Cookbook recipes
